In the tables you will find templates for various products. For books, only templates for the inner pages are provided because the book cover depends on the number of pages and therefore varies in size.
How to use PDF templates in InDesign: Create a new document in InDesign (CTRL+N) and drag the PDF into it. Now set up your document according to the dimensions specified in the template (CTRL+ALT+P).
Find the dimensions for the book cover: If you are designing a book and need the correct cover dimensions, go to the respective product page, choose your paper and under "Cover options" select "Cover print". The appropriate dimensions will then be shown in the right column below the price box. You can find more on this topic here.
